I am occasionally asked for Proof of Unemployment or Proof of Disability (I 
hold a Blue Badge)

I tried through the Jobs Centre to get Proof of being unemployed but as I 
didn't want to claim benefits, several weeks of paperwork and interviews got 
me no where

same thing with Proof of Disability

if I don't want to go on the dole, then I can't seem to get proof of either 
one (seems bizarre that if I don't want a handout, I can't get proof that I 
am unemployed and / or disabled)

any suggestions would be greatly welcome

You aren't unemployed. You are of independant means. 

You can register as seeking work but you have to conform to the rules.
That means looking for work and proving you are doing so. For that you
get NIC credits which will  go towards your pension when you reach
pension age

Your blue badge.
You should have a letter saying who it is for and conditions of use

Just sign on to get the paperwork, takes 1/2 an hour by phone. But you have 
to attend an interview to verify your details, then its up to you if you 
want to continue signing on.
