Christmas Cake time
I've decided that next weekend is Christmas Cake (+pudding + mincemeat)
making time. I know, it's a bit late, but it's the first chance I've
had!
The cake I've had most success with over the past few years is Mary
Berry's celebration cake (with some extra added ingredients here and
there - it seems quite failsafe no matter what I do to it!)
And I was thinking of doing one of the Sainsburys mag's chocolate +
cranberry jobs on Christmas eve, too. (It is a "eat straight away" I
think).
Anyone got any others they'd like to offer up? How about decorations?
I'm remarkably bad at decorating my Christmas cakes (have had several
bad experiences - starting but not limited to the first one I ever tried
as a teenager that ended up painted bright green and red!)
I did make a lovely looking gingerbread house 6 years ago, so I'm not
entirely without decorating skills, they just don't seem to work on
cakes for some reason. (And as it happened, the gingerbread house
didn't get eaten as it turned more into a decoration than a food item!)

I hope I'm allowed to boast about the cake decorating of one of our tea
room staff, because it's nothing to do with me: Take a look at this
page and one of her Christmas cakes is on the right and yes, all that
'ribbon' round the edge is icing!

My xmas cake decoration, is a set of glass ornaments , probably made
in Poland?
There are 20 or so , each one is a trio of 3 green glass holly leaves
with red glass berries.
Very pretty on a cake simply iced in plain white and the decs pressed
on before it sets hard.
After used they get washed and out away for next year.

That's pretty. My aunt tried to explain to me how to make frilly icing,
but I've completely forgotten what she said now. :-/ I suspect I
probably need a practical demonstration!

Wow, that's good!
I used to just marzipan and ice the top, and do some very simple design, a
candle or a tree shape. Or if totally pushed for time, stick in a few
ornaments. These days my daughter does it, she is very good, but I don't
know if she is as good as that!

Joanna makes all of it by hand, including all those lovely flowers etc.
She learned flower arranging so that she could learn how to make the
flowers look natural! That's dedication. It would drive me mad but
she loves it and does it as a hobby as much as anything else.

very nice BTW IMHO the last two staff should do their photos with a longer
focal length lens (say 100mm). You probably didnt want to know that - even
if its right, which it probably isnt.

Thank you and I will. I probably won't see her until next spring now
but I will certainly pass that on. She's very clever and this work she
does has nothing to do with us - we just show pics of it so that others
can order from her if they want to.
